Shredded Chicken & Cheddar Open-Faced Melt


1 small whole wheat baguette
1/2 red onion, sliced thinly
1 apple, diced
2 celery stalks, diced
2 tbsp Dijon mustard
1/3 cup mayonnaise
2 cups Foster Farms Shredded Chicken, thawed
pinch salt and pepper
2 cups arugula
4 cheddar cheese slices


1. Cut baguette in half. Slice each half open lengthwise. Toast. 2. In a large bowl, mix onion, apple, celery, mustard, mayonnaise, chicken and spices. Combine well. 3. Top each baguette slice with cheese, arugula and chicken mixture, and serve.

Gluten-Free Option: Use gluten-free bread
