Turkey Caprese with Avocado


12 ounces Foster Farms Smoked Turkey Breast thinly sliced
4 heirloom tomatoes sliced
2 avocados sliced
1/2 red onion thinly sliced
4 ounces fresh mozzerella sliced
2 tsps Balsamic vinegar glaze
2 tbsp extra virgin olive oil


1. Lay down sliced heirloom tomatoes on the plate and top with sliced avocado. Sprinkle a few thin slices of red onion and top with thinly sliced turkey. To finish, drizzle with about 1/2 a tablespoon of extra-virgin olive oil and 1/2 a teaspoon of Balsamic vinegar glaze. 2. NOTE: Balsamic vinegar glaze is available in most grocery stores, however if you are unable to locate any you can always just make your own. Simply take a heavy bottomed saucepot and reduce an amount of Balsamic vinegar equal to 2-3 times the amount of glaze called for in the recipe until it reaches a syrupy consistency. Allow to cool and use in place of the pre-made glaze.
